I've been looking for new breakfast ideas - I feel like we eat the same thing every, single morning!!! And sometimes it's just nice to change things up!
I saw this Berry Breakfast Cake on one of my favorite Instagram accounts (Yummy Toddler Food) and as any sourdough baker would do, I immediately thought, "hmmm I bet I could throw some sourdough starter into that."
This Sourdough Berry Breakfast Cake is so soft and tender from a base of yogurt, ripe banana and sourdough starter. It's perfect for breakfast, as a snack or even dessert (topped with whipped cream of course!). My five year old has requested it at her "next birthday party." Oh, and did I mention, it's SUPER EASY TO MAKE!
SOURDOUGH BERRY BREAKFAST CAKE
yield: 10 servings
original recipe: Yummy Toddler Food
Ingredients:
¼ cup whole milk plain yogurt
¼ cup sourdough starter (fed)
½ cup mashed very ripe banana (about 1 medium)
¼ cup maple syrup or honey
¼ cup unsalted butter (melted and slightly cooled)
2 eggs (lightly beaten)
2 teaspoons pure vanilla extract
1.5 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
pinch of salt
½ cup blueberries (fresh or frozen)n - I used strawberries and blueberries
Instructions:
Preheat the oven to 375 degrees F. Coat a 9-inch baking pan (metal is best) with nonstick spray. (I also line it with parchment paper so it's easy to lift out and slice without scratching the pan. This is optional.)
In a large bowl, stir together the yogurt, starter, banana, maple syrup, eggs, butter, and vanilla.
Add the flour, baking powder, baking soda and salt.
Gently stir the yogurt mixture into the flour mixture.
Pour batter into the prepared pan. Sprinkle the berries on top.
Bake for 24-28 minutes, or until the edges are lightly golden brown and a toothpick inserted into the center comes out clean.
